Literal Italian translation is "grated bread". Flavoured with whatever herb you like it's delicious to sprinkled on pasta or fish. Works well with basil, rosemary, thyme and parsley. It keeps well in an airtight container in a cool cupboard for up to a week.
Gently heat the olive oil on a low heat, add the garlic and let it cook gently without burning for a few minutes. Add the breadcrumbs and herbs, stirring occasionally and until nicely toasted. Remove from the heat, add the lemon zest and it's ready to use.
